Duties
Responsible for the on-site, hands-on effective management of INDOPACOM/Camp Smith Food Court, MARFORPAC Aloha Kitchen, and all contracted food concept operations. Will manage food operations serving all levels of Marine Corps, Navy military personnel, contractors, and civilian personnel in secured buildings. Manages and oversees all phases of the food operations in accordance with established policies, procedures and guidelines. Responsibilities include food production, ordering of food, beverages, and supplies; menu planning to include cost cards for all menu items; forecasts food and beverage requirements, requisitioning items against established purchase agreements planning and organizing staff work; interviewing, selecting, training, evaluating, performance development and staff appraisal, and disciplining personnel when required; works in accordance with the collective bargaining agreement; Assists with Shared Services invoicing and inventory reports. Maintains all areas of the operation in a clean and sanitary condition in accordance with NAVMED regulations. Prepares menus and establishes selling prices to attain desired cost of goods. Conducts special studies and surveys or reviews as assigned. Makes recommendations to supervisor of changes to facility policies, guidelines, and standard operating procedures in order to achieve designated objectives and improve operational effectiveness. Collects and assembles statistical data regarding past and current operations and maintenance expenditures. Reviews monthly financial statements and report changes to accounting, to include ensuring sales and all expenses are accurate. Is responsible for financial results of the operation. Approves payroll and submits all required reports by or before deadlines to include the monthly inventory, daily activity report (DAR) and tip reports. Reviews data and prepares short-range estimate of projected costs. May contact vendors for information and negotiation on prices and selection. Participates in resolving a variety of food administrative and operational problems by assembling facts, evaluating information, and drafting reports that may be used as the basis for recommendations, interpretation, and decisions by higher-level management officials. Ensures compliance with fire, safety, security and sanitation policies and regulations.
Will provide supervisory oversite for the Camp Smith Sunset Lanai facility and operation. May assist in planning and catering events such as command functions, cultural events, balls, local parties etc. Meets with clients, discusses requirements such as date, number of guests, occasion, and explains services offered, i.e., room, decorations, menu, entertainment, etc. Makes recommendations. Costs function, prepares contract/Banquet Event Order, obtains clients signature, deposit and full payment. Arranges required food and beverage, supplies, decorations, equipment and personnel. Maintains contract files and books events in catering software. Follows-up with client evaluation of services rendered. Establishes a catering program marketing plan. May prepare private party brochures and advertising material. Submits monthly market segment report.
Provides meaningful connections through customer service with an emphasis on courtesy. Assists customers and communicates positively in a friendly manner. Takes action to solve problems quickly. Alerts the higher-level supervisor, or proper point of contact for help when problems arise. Adheres to safety regulations and standards. Promptly reports any observed workplace hazards, and any injury, occupational illness, and/or property damage resulting from workplace mishaps to the immediate supervisor. Adheres to established standards of actively supporting the principles of the EEO program and prevention of sexual harassment.

EVALUATIONS:
Qualifications
Three years of experience which demonstrates knowledge of standardized mess/club or comparable food service and beverage practices, procedures, and pricing. Skills to assist customers in planning delivery of catering and party services. Knowledge of methods and procedures for purchasing required food products, including proper storage to prevent spoilage and pilferage. Ability to prepare reports and complete simple contractual arrangements. This is a white-collar position where occasional lifting up to 20 lbs. may be required. Must be required to maintain appropriate security/suitability clearances to enter and exit secured facilities. Current driver’s license is required.
